It’s great to have when you’re feeling low, or have been following an unhealthy lifestyle for a while. Ingredients 2 L chicken stock 1 cinnamon stick 4 tbsp Hearthy collagen 1 ginger piece, 1-inch, minced finely 1 yellow onion, sliced thin 2 tsp coriander seeds 2 star anise 2 tsp fennel seeds 4 cloves, whole 4 rice noodles servings, around 200g ½ bunch Thai basil ½ bunch green onions ½ bunch cilantro 1 lime, sliced 1 tbsp fish sauce 4 tbsp sriracha 4 tbsp hoisin sauce 2 cups bean sprouts 4 red chilies, small Instructions Put cloves, star anise, coriander, and fennel in a spice bag (or cheesecloth). Take a large pot and put in the chicken stock, spice bag, collagen, ginger, onion, and cinnamon stick. Allow the stock to simmer for 30 minutes to 1 hour. While the soup is bubbling gently, chop the cilantro and green onions, as well as slice the lime. When you’re done cooking the stock, discard the spice bag. Add half portion of the green onions and basil, as well as all of the dry rice noodles. Let it simmer for 5 more minutes, and then add the sriracha, hoisin, and fish sauces. Divide the soup into four bowls. Dunk in the remaining ingredients - onions, bean sprouts, basil, chili, and cilantro.  Instant Pot Butter Chicken Buttery, creamy, and filled with dreamy textures and flavors, butter chicken is taken very seriously in the land of its origin - Punjab, India. And now, it’s in the process of mesmerizing the world too. You must try it - Instant Pot butter chicken takes just 20 minutes. This delicious chicken recipe goes best with fragrant long-grain rice, chapattis, or tortillas.  Ingredients 4 tbsp butter 2 lbs  chicken,  skinless, boneless & cubed 2 tbsp ginger, fresh, grated 1 onion, chopped 2 tsp garlic powder, minced 2 tsp garam masala 1 tbsp curry powder ¾ tsp smoked paprika 1 tsp pepper and salt 1 cup heavy cream 1 can tomato sauce Cilantro, chopped, as an optional garnish Instructions Put the Instant Pot into sauté mode. Throw in butter the butter. As it melts, put in onions, all the spices, ginger, and garlic.  Sauté for 5 minutes, stirring well to ensure that nothing burns. Dunk in the tomato sauce and chicken cubes. Seal the lid, and cook for 7 minutes under high pressure. When done, let the pressure out quickly. Stir in the heavy cream and saute for a couple of minutes, till the sauce thickens to your liking. Serve hot with a sprinkling of cilantro. Easy Hearthy Yellow Split Pea Flour Tortillas Who would have thought you could make tortillas with split pea flour? Well, Hearthy Foods did, and the results are simply out of this world. If you don’t like corn, or you’re simply tired of the same old-old, this is the go-to option for you. The recipe also uses Hearthy Foods Tapioca Flour. Ingredients 2 cups Hearthy Foods Yellow Split Pea flour ⅔ cup Hearthy Foods Tapioca Flour 1 ⅕ cups water (add more, if needed to thin) ¼ tsp sea salt Instructions Put all of the flour and salt into a wide mixing bowl. Whisk together, till the mix is evenly colored. Add in water, a tablespoon at a time, till the texture is thin, just like pancake batter. Place a griddle/skillet on the stove. Set to medium heat. Pour ¼ cup of batter on the pan. You could perhaps move the pan in a circular motion so that the circle becomes wider, but ensure the thickness is even. Cook for 1-2 minutes on each side, until it’s golden-brown. A sign that the tortilla must be flipped onto the other side, is when the shine on the uncooked surface becomes noticeably dull. Easy Red Lentil Flour Pakoras Pakoras are a South Asian snack, usually wolfed down with cups of steaming tea. While the traditional recipe uses chickpea flour (which is also gluten-free) this modern-version stars Hearthy Foods Red Lentil Flour - and is arguably better than the original! Ingredients ½ cup Hearthy red lentil flour ½ tsp salt ¼ tsp baking soda ½ cup thinly sliced onions 1 tsp cayenne 1 tsp cumin seeds 2 tsp coriander seeds ½ cup cold water Recipe Mix all the dry ingredients. Stir in the water slowly, till the batter is thick and workable. The batter must not be runny, rather, it must be like thick cake batter. So pour only as much water as necessary. Take a wok/pan and pour in enough canola oil, for a 2 - 3 inch depth.  Use medium heat, and when hot enough, drop in the pakora batter - one 2-tablespoon-sized lump at a time. The messier the shape, the better. When the lower side is deep golden brown, flip over, and fry till the other side is the same. Serve with your favorite Indian chutney - mint and/or tamarind are perfect. When you decide to go gluten-free, ensure you also add a lot of fiber, B-vitamins, calcium, and iron to your diet.
