PB-Apple energy truffles: they’re quick, simple and so delightful! By Sana Parekh at Cognizant Cooking
1 cup @Hearthyfoods Apple flour
1/2 cup Gluten free rolled oats
1/2cup Peanut Butter (or any nut butter you prefer)
1/2 cup dark chocolate chips + melted coconut oil
Method: Combine all ingredients in a mixing bowl (except the chocolate chips) until it comes together. Make small balls of the mixture and refrigerate for 30mins.
In a separate Melt the chocolate chips and coconut oil, simply dip the balls (one at a time) and coat in chocolate! Refrigerate :)
This recipe makes 12-15balls and can be stored in the refrigerator in an airtight container for a week.
Notes: if the mix doesn’t come together at first, add nut butter to it and combine.
