Chocolate Chip Muffins using Cassava flour & Rice Flour.

Servings: 8
1 cup + 2 tbsp of Cassava Flour
1/2 cup Rice Flour
2 tsp Baking Powder
1/3 cup Sugar
1 tsp Vanilla Flavoring (optional)
2 eggs
1/2 cup vegetable oil
1 mashed ripe banana
3/4 cup Chocolate Chips
Mix together banana, eggs, oil, vanilla, and sugar.
Add the cassava and rice flour as well as the baking powder. Mix together well.
Then, fold in the chocolate chips.
Grease a muffin tin. Scoop 1/3 cup of batter into each muffin tin.
Bake at 350 F for 25 minutes. 15 minutes on the bottom rack and 10 min on the top rack.
