Gluten-Free Air Fried Zucchini Sticks

Gluten-Free Air Fried Zucchini Sticks

Here is another guiltless recipe that removes the gluten and deep fry method, turning this food into a healthy friendly appetizer. Using our red lentil flour is another way to boost protein and fiber in an otherwise calorie high snack. Try our Red Lentil Flour seasoning recipe to coat your air fried chicken or on other vegetables, like corn!

Air Fryer Zucchini Ingredients

2 medium zucchini, sliced fingerling

1 cup Milk Alternative or Milk with 1 tsp of Salt and ½ tsp pepper to soak.

Seasoned Flour coating for Zucchini

½ cup Hearthy Red Lentil Flour

½ tsp Himalayan Salt

½ tsp Paprika

½  tsp Garlic Powder

¼ tsp Onion Salt

¼ tsp thyme

⅛ tsp Black Pepper

⅛ tsp Cayenne Pepper (Optional spice)

In a bowl, add one cup of milk or milk alternative with salt n’ pepper, stir. Slice zucchini in half then into sticks, about ½ inch thick. Place fingerling zucchini sticks to soak. Soak for 15 to 30 minutes. Toss a few times to make sure they are all coated.

Preheat the air-fryer, using the air fry setting.

To prepare flour coating for zucchini, in a shallow bowl add Hearthy Red Lentil Flour  and all the spices. Whisk together until well combined. Remove soaked zucchini one by one and coat in flour mixture. Once all zucchini have been coated, place carefully in a preheated Airfryer. Optional, is to lightly spray the top of the zucchini with oil. Our air fryer had a 17 minute setting. We are looking for the zucchini to have a medium brown color. Check zucchini sticks after 10 minutes into cooking for doneness and color. Optional to flip zucchini sticks during the cooking process, to prevent coating from falling off. Once ready, remove to a platter and serve with a sauce of your choice. For our recipe we made a spicy seasoned mayonnaise with a little oat milk to create a sauce. Garlic powder, paprika, cayenne and salt. Ranch dressing is always a hit too!
