Oat Flour Crepes Gluten free Delicious
50 g (1/2 cup oat Flour)
1 to 2 tsp brown sugar
Pinch of salt
1 egg, room temperature
1/2 cup milk, room temperature
1 tsp butter, creamed
(makes five 8 in crepes)

Mix together the dry ingredients. In a separate bowl, beat the eggs and whisk on the milk. Slowly, stir this mixture into the dry ingredients. The batter should be quite liquidy. Lastly, whisk the butter in.
Put an 8 or 10 inch skillet over medium heat. Once the pan is hot, brush it with a thin layer of butter (or oil). Lift the pan and pour - 1/4 cup of batter on top the top of skillet (furthest from you). Immediately begin to tilt and swirl the pan to spread the batter cover the surface of the skillet. Cook for 30 to 60 seconds (depends on the heat of the stove).
Optional : Sprinkle brown sugar crumbles while the first side cooks. Loosen the edge with a rubber spatula and flip carefully. When done, fold in half twice to form a fan/triangle shape.
