Gluten-Free Oatmeal & Date Cookies (Diabetic Friendly)

These naturally sweetened cookies are perfect for anyone looking to satisfy their sweet tooth without any refined white sugars!

Ingredients

· 8 tablespoons (1 stick/​115 g) unsalted butter, at room temperature
· ¼ cup (50 g) Hearthy Foods Date Flour
· ½ cup packed (105 g) Swerve Brown Sugar
· ½ teaspoon kosher salt
· 1 teaspoon baking soda
· ½ teaspoon ground cinnamon
· 1 large egg
· ¾ cup (100 g) Hearthy Foods Gluten-Free All Purpose Flour
· ¾ cup (80 g) gluten-free old-​fashioned rolled oats
· 1 cup (145 g) chopped pitted Medjool dates (about 16 )

Instructions

1. Combine butter and both the date flour and Swerve Brown Sugar

2. Add salt, baking soda and cinnamon and mix.

3. Add egg and mix

4. Add flour and oats and mix slowly

5. Mix in chopped dates

6. Refrigerate the dough for at least 30 minutes

7. Heat oven to 350 F

8. Line baking tray with parchment paper and roll dough into balls and flatten

9. Bake for 10 minutes

10. Cool for 5 minutes and then enjoy!
