Savory Mushroom Oatmeal  By Abeer Najjar 

Oatmeal is a filling and nourishing breakfast option with so many possibilities. And  while the standard seems to be always make oatmeal a sweet breakfast with fruit  and sugar, savory oatmeal highlights how much more diverse the options are with  a simple ingredient like oats.  

This Savory Mushroom Oatmeal is full of umami flavors from soy and mushrooms  and utilizes Hearthy Chicken Broth powder for flavor and nutrition. Get creative  and personalize this recipe with different toppings like fresh herbs, nuts, and  protein. This comforting and nourishing dish is sure to become a regular part of  slow mornings and weekend breakfast! 

  • Ingredients: 
  • 1 garlic clove, chopped 
  • 1/2 cup sliced mushrooms 
  • 2 cup water 
  • 2 tbls soy sauce 
  • 1 tsp sesame oil 
  • 2 tbls chicken broth powder  
  • 1/4 cup steel cut oatmeal  
  • olive oil or butter 
  • salt & pepper 
  • Toppings (optional): 
  • chopped cilantro 
  • sliced green onion 
  • chopped walnuts 
  • mushrooms  
  • boiled egg  
  • furikake seasoning 

In a deep medium-sized pan on medium/high heat, warm 2-3 tablespoons of olive  oil or butter. Sauté the garlic and mushrooms in the olive oil for 3-5 minutes until  the mushrooms are browned and tender. Place a few mushrooms aside for garnish  later. Add the water, soy sauce, sesame oil, chicken broth powder, salt and pepper.  Bring the broth to a boil.  

Add the oatmeal to the boiling broth and reduce to low heat. Allow the oatmeal to  simmer for 10-12 minutes until the oats are cooked through and it has a porridge like texture. 

Plate the oatmeal in a deep bowl and garnish with any desired toppings. Serve  warm.
